longest cookie name ever! i found this recipe on pinterest and thought i'd make some cookies of my own using what i had in my cupboards. - peanut butter, oatmeal, mini and regular-size chocolate chips and topped with sea salt. i love adding thick sea salt to cookies.
1/2 cup butter, room temperature
1 1/4 cup brown sugar
1/2 cup sugar
1/3 cup peanut butter
1 egg + 1 yolk
2 tsp vanilla extract
1 1/4 cup flour
1 cup old fashioned whole oats
1/2 tsp baking soda
1 cup semi-sweet chocolate chips
Optional: 1 tbls sea salt for topping
in a mixer fitted with the paddel attachment combine butter with the sugars and mix together until fluffy. stir in the peanut butter.
add the egg + yolk, vanilla extract and stir together. stir in the oats, baking soda, and flour. add the chocolate chips and any optional chips you’re using and stir in.
scoop golfball-sized balls onto a cookie sheet, about 2 inches apart. sprinkle with sea salt (optional) bake at 325F for approximately 10-12 minutes. allow to cool and then enjoy!
