
whenever my girlfriends and i get together my friend wexler always brings a box of those super sweet, brightly-colored grocery store cookies they make for every holiday. they are the cookies you know you shouldn't eat but you can't say no. they are so bad they are good.
it was wexler's birthday over the weekend i made her a batch of these cookies as a little treat. this recipe makes a ton so i've halved it and it makes about 50 cookies. seriously the regular recipe make over 100 cookies!
i topped a few of mine with valentine's day sprinkles. festive!

cookies:
3 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup butter, at room temperature
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
pinch of salt
3/4 cup sour cream
frosting:
1/2 cup butter, room temperature
1/2 teaspoon vanilla extract
2 cup powdered sugar
3 tablespoons heavy cream
1/4 teaspoon almond extract
drops of red food coloring
sprinkles
in the bowl of a stand mixer with the flat beater attached, cream the butter and granulated sugar at medium speed until light and fluffy. scrape down the sides of the bowl with a rubber spatula as needed. add the eggs, beating until each is incorporated. add the vanilla and sour cream and beat at low speed until combined.
add the dry ingredients and beat at low speed until just combined, scraping down the bowl as needed. divide dough into two sections. wrap in plastic wrap and chill in the refrigerator overnight or at least two hours.
preheat the oven to 425 degrees. line 2 large baking sheets with parchment paper. with a rolling pin, roll the dough out to 1/4-inch thickness. using a 2 1/2-inch round cookie cutter, cut out circles and transfer to a baking sheet. bake for 7 minutes, until pale golden. cool on wire racks.
to make the frosting, in the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and vanilla. slowly beat in the powdered sugar. once smooth and creamy, add in heavy cream and almond extract. If desired, add food coloring and beat until combined.
once cookies have cooled completely, frost and add sprinkles.
Oh my gosh! I am so happy I have the recipe now. I've never had a cookie with bounce to it. Bravo JOAT BRAVO!
