you know that scene in bridesmaids where kristen wiig goes to the trouble of making one perfect cupcake for herself? she even makes fondant flowers for it! well if you're feeling like a solo cake without a lot of trouble {no fondant flowers here} you need to try this recipe. plus you probably have all these ingredients in your cupboards.
it makes one, little, perfectly chocolate cake for you. but you can always share if you're feeling generous. i originally found this recipe in sunset magazine.
1 tbsp unsalted butter, plus some extra to grease the ramekin
1 tsp unsweetened cocoa
1/4 cup semisweet chocolate chips
1 large eggs
4 tsp sugar
1 tbsp peanut butter
1 tsp flour
pinch of salt
preheat oven to 375. grease a 3/4-cup ramekin with butter, then dust with 1 tsp. unsweetened cocoa. set aside.
put 1 tbsp. butter and the chocolate chips in a small heatproof bowl set over a small pan of simmering water. heat, stirring, until chocolate melts, let cook a few minutes.
whisk egg, sugar and peanut butter in a small bowl to blend. whish in chocolate mixture until well incorporated, then stir in flour and salt just until cimbined. pour batter into ramekin. set on baking sheet and bake until 7-10 minutes for a molten center or 10-12 minutes for a more done cake but with a soft center.
let cake cool 2 minutes. run a knife along in the side of the inside of the cake to loosen it. invert onto a plate. eat right away.

My boyfriend recently showed be a recipe you posted who knows when about peanut butter brownies with chocolate on top. It was the first time I’d heard of your blog. I made it and it was delicious.
